Chicken & Ravioli

  1. Prepare dough
    1. 2 cups flour / 2 eggs / 3 yolks
    2. Mix
    3. Let stand 1 hour
  2. Prepare filling
    1. spinach / mushrooms / garlic
    2. mince and fry in pan
    3. mix w/ ricotta / paprika
  3. Prepare chicken
    1. oil chicken
    2. salt / milk / dijon mustard / rosemary
    3. put in bag for 30 minutes
  4. Roll ravioli & add filling
  5. Cook chicken
    1. preheat oven to 350
    2. fry on sizzling pan, brown all around
    3. put in oven and set to broil for 10 mins
  6. Cook ravioli
    1. 8-10 mins
  7. Make sauce
    1. Remove chicken and let stand covered
    2. Pan back on high heat
    3. Deglaze with milk, leftover marinade, oil
    4. Add parmesan / milk / salt / pepper until creamy
    5. Add cold water mixed with flour
